Sympathy for the Devil’s rhythm is a samba. Keith Richards said, “It started as a sort of acoustic folk song and finished like a slightly mad samba, with me playing the bass and recording the guitar later.

That’s why I don’t like going into the studio with songs already prepared”. The documentary One Plus One by Jean Luc Godard contains the recording sessions of this song which lasted five days. There was a moment when one of the lights used for recording the documentary fell over and set fire to the whole studio. The tapes were saved but the Stones’ guitars were not.

VINEYARDS

The vineyards are situated in Toledo, on poor soils, of red and clay earth, with the yields per hectare being pretty low. We don’t do any treatments for disease or insects, as it is the perfect place for sincere, sustainable and ecological winegrowing.

WINEMAKER'S NOTES

ASPECT: Pale straw coloured, with green and steely flecks, shiny and crystalline aspect.

NOSE: Clean and intense aroma, tropical fruits, grapefruit, citrus fruits, balsamic and mineral notes.

MOUTH: Fresh, balanced, with the body and bitterness characteristic of these varieties.

PAIRING SUGGESTIONS

Recommended with all types of seafood, fish, starters, light and rice dishes, being the perfect combination with the ‘Mediterranean diet’.
