GRAPE VARIETIES
Alicante-Syrah is a grape used for top-end wines that are prized for their ‘size’, dense colour and phenolic content.
A rare red fl esh varietal covering only 4.000ha.
SOIL
Clay Limestone.
VINIFICATION
Hot pre-fermentation maceration - grapes are heated up to 75°C during 15 hours to extract the deepest color and increase aromas.
TASTING NOTES
The wine is an inky colour. On fi rst smell, an array of elements jump out from pepper, very ripe crushed black fruits, thyme, and fennel to toasted pine nuts. Finally the palate is surprisingly smooth. It is not at all heavy and the tannins are still young but with plenty of ageing potential. Dark chocolate, mocha and nuances of graphite and spices tickle the senses.
FOOD AND WINE PAIRING
Not to much acidity and only a slight hint of wood and tannins makes this red perfect to drink on its own. Pairs with beef, pasta, smoked meat and dark chocolate.
