Wine Notes

20% of the fruit was hand picked as whole bunches, with the remaining one & half tonnes crushed over the top. Fermentation then occurred over 10 days, then the whole bunches crushed by foot. The inclusion of the whole bunches produces aromatic aromas and the stalks add a further dimension and tannins to the structure and mouth-feel. Matured in french oak barrels with 25% new oak for 11 months before bottling, with further bottle aging before release.

Vineyard

Sourced from the Wait families ‘Talara’ vineyard, in the renowned Blewitt Springs sub-region of McLaren Vale. The vineyard sits on sandy loam over shale soil, which has a big influence and what makes Blewitt Springs so unique, and produces an intense, complex and floral Grenache.

Food Pairing

Great with game dishes such as Kangaroo, venison or duck. Mushrooms and grenache are best mates, as are strong herb flavours such as rosemary, thyme and sage.
